 smoked then fried chicken wings

Post smoked then fried chicken wings
recipe for smoked then fried chicken wings

ingredients:
2 and 1/2 lbs chicken wings
barbecue rub
your favorite wing sauce

preparation:

cut chicken wings into sections (you can leave whole if you like, chow)
cover well with your favorite dry rub .. i used bone suckin all purpose rub
put on smoker (you can cook these indirect also)
cook at 225° for about 2 hours ..
i used pecan and royal oak charcoal for the smoke ..
when cooked remove from smoker and put into a pre heated oil ( iused a deep fryer)
at 350° fry just until the skin is crispy .. remove , drain any excess oil and top
with your favorite wing sauce .. i used franks ..

i like to fry these at the end even though they are cooked when they come off the smoker ..
the skin on the wings is not as crispy as i like for wings ..

Wings look terrific! I've still got a lot to learn about using a smoker, so I've got a really dumb question. Do you leave that meat probe in your pit while you smoke to get your pit temperature?

It looks like Steve is monitoring his pit temp there, with the probe stuck in a potato. It's left in start to finish so you can dial the temp in when you first light up and periodically... right there at the grate where the food is. Steve probably has a probe for meat, too, he just didn't need it for what he was smoking, or maybe it was stuck in a sausage. My digital thermometer has two probes, one for the pit and one for the smoker, but I don't always use them both.

That's what I do too. Here's a picture of my smoker. The little round red thing is a wireless transmitter, and the the probe is down inside. I can use it to monitor the smoker temperature, or stick it into whatever I'm smoking.

Gotcha! I just bought one the other day (a one-prober) and left it in my chicken while it was smoking. I was wondering though if the gauge on my smoker was right because it took longer than I had thought to smoke the chicken. Now, I guess I can just put the probe in there like BBQsteve did and see how it reads vs the pit gauge.

I've only had problems with built in thermometers. I NEVER trust them.
