I've been using a local product called Snoqualmie Falls Lodge Pancake and Waffle Mix.
All you need to do is add water. Another brand which I believe has gone national is
Krustez and it used to be my go-to pancake mix. The gal that was their test kitchen chef
I used to teach school with. She teaches home-ec in Kent now.
The key to good pancakes is to have good griddle, keep it hot, and use just enough oil
or grease to coat the surface. It shouldn't be fried in heavy oil; then you get fry bread or
bannock. My griddle is a cast iron Griswold and it goes camping with me as well.
