 Southern Style Chicken and Dumplings
This turned out AWESOME! The dumplings just melt in your mouth
SOUTHERN CHICKEN N' DUMPLINGS 2-3 chicken breast bone or boneless water to cover chicken 1 stick of butter salt and pepper, to taste
Dumplings 3 cups self-rising flour 1 cup milk 3/4 cup butter or margarine salt and pepper, to taste
Place chicken and butter in a Dutch oven and cover with water. Boil on medium-high until chicken is done. Remove chicken, debone, and shred Return chicken to pot and set heat to medium.
Dumplings: Place flour in a large bowl and make a well in the middle. Add milk and butter. Stir to make a firm dough, use your hands to mix it well. Knead dough until it is no longer sticky. Add more flour, if necessary.
Thinly roll out dough on a floured surface or on wax paper and cut into strips or use small cookie cutters. I rolled this to about 1/4" thickness.Drop dough into broth. Stir frequently. More water may be added to make a larger quantity without diluting flavor. Add salt and pepper to taste.
Cook 10-15 minutes on low.

Mmmmmmm that really sounds good!! Too bad DH can't have the dumplings.  Maybe I'll try it some night when he isn't home.
