Post Clams casino stuffed mushrooms
Picked up some stuffing mushrooms and everything else I needed for this experiment. I'll post a recipe if it's worth it, meaning, if they go over well. RC

Judging by the wonderful aroma of the stuffing, I'm thinking this is going to be a winner - what the hell, it's got bacon in it, and that's almost cheating. I like mushrooms too. RC

I pretty much follow this superb recipe

In addition I add 2 cups of bread crumbs - I made the mistake of using seasoned bread crumbs, which added flavors I didn't want - and an egg. I used one small can of clams, poured the juice into the mixture, and chopped smaller any large pieces of clam. No salt is needed. They went over well, but I was disappointed with having used the breadcrumbs I did. I baked the stuffed shrooms @ 350* for about 30 min.

I made an appetizer last year following Giada's recipe, but instead of loading the mixture into clam shells, I used fresh chopped clams and cooked it in a casserole, then spooned it onto lightly toasted slices of French bread. It didn't last long. RC

Now that sounds good RC! I've got fresh made breadcrumbs I'll use. I just may try this to have while watching the football games.

I've also got some fresh French bread........yummmmmm. :food-bigdrool:

I am confused. Does the stuffing have clams in it and is stuffed into a mushroom cap (ie stuffed mushrooms)OR does the stuffing have mushrooms in it and the stuffing is spooned on top of whole clams in the shell (ie clams casino) then baked? Either way they sound great!!

Yeah, sorry it took so long to follow up, but when I screw up, although that's a large part of how I learn, it takes me a while to figure out where I went wrong, and in this case it was the breadcrumbs. The casserole idea was cleaned to the last speck. RC

Haha....they're stuffed mushrooms. The stuffing has the clams in it.

Haha....they're stuffed mushrooms. The stuffing has the clams in it.

Yup, and I did mince some of the stems removed from the shrooms. All this is making me want to pick up more mushrooms and give it another go - I do love stuffed mushrooms. I like the texture change from the soft, but slightly chewy due to the clams and bacon, stuffing, and the snap of the mushrooms. RC
