Post Any good recipes for hot dog/burger buns?
I usually just use the white bread recipe from Kitchen Aid. Anyone have something different that you really like? I need to make them for tonight. lol

I use this one. THe dividing evenly thing does nothing for me, I weigh them out to about 2 oz each, and I give them a rise before shaping them.

I do the same thing Suzi, I weigh mine out to 2-1/2 oz. for the burger buns. lol I've never made hot dog buns before. Do they turn out dense or softer?

they turned out pretty soft for me last week, I think I was previously adding too much flour just because I'm so used to making Italian bread or stupid bagels..... a little stiffer. I did them in the mixer until they were just this side of still sticky, then kneaded in the rest so I could feel it....

I think I ended up leaving out about 1/4 cup of flour....

Suzi, I'm starting to make these buns and I noticed that there is only the one rise mentioned.......do you rise first, then shape and rise again?? Is that what you meant?? HELP!!

No problem......I figured it out and let them rise twice. It was a nice, easy dough to work with.
