Ssounds great! Tonight I just used up some Mexican rice that I had saved in the freezer....tasted just as good as the first time!
You should try Mamas pinto bean recipe, freezes great and make ALOT!!

It's hard to get a roast for two people without having leftovers. With beef, pork or chickens are oven roasted, if we don't want the same meal two days in a row, I slather the meat with Sweet baby Ray's sauce and make BBQ sammies with a different side. Leftover gravy is always frozen for another day. We do our best to keep waste to a minimum, and a lot of leftovers become my lunch the following day, as I work from my home. We love stir fry meals, and I always make extra just for the following day's lunch. With a little thought you can stretch the food budget into multiple meals, especially when meat is on sale. I love to get to the store early in the morning when they mark down the meat that will expire the following day. It always works out to be a super deal, and I break down large packs into smaller packs and use the vacuum sealer.

It's one of the best investments you'll make Steve! Food will stay fresh in the freezer for months longer using it. It's great for portioning out foods too.

I occasionally tend to overcook, though I enjoy leftovers. I don't like to waste food, and so, what we can't eat goes to my buddies, the crows. All I have to do is walk out of the house, and they begin making a racket. Today they feasted on week old Genoa salami; there's not much that they won't eat. RC
