Pita Pocket Pork Sandwiches

 Pita Pocket Pork Sandwiches
1 lb boneless loin chops, sliced in thin strips 1 TB EVOO 1 tsp cracked black pepper 1/2 c roasted red peppers 1 TB finely minced garlic 1/2 c mayo 2-3 tsp milk or lemon juice lettuce 8 pita halves
(I've never actually measured any of this... sorry lol)
Mix together pork strips, oil, pepper. Refrigerate at least a half hour. mix mayo, garlic, thin with milk or juice to make a salad dressing consistency, set aside. Brown pork, add red peppers to heat thru. Stuff into pitas with lettuce and dressing, don't be shy to use LOTS of dressing!

Sounds like a "lamb-less" version of a gyro. Thanks for the recipe. This will give me another use for pork loin, though I'll probably just use a tortilla shell. I've always got those on hand.

Here's an alternate sauce for them if you are not into the mayo sauce.....
10 oz (or so) plain greek style yogurt 1 TB fresh minced garlic 1/3 cup finely chopped cucmber ( I used the english, no peeling or seeding) 1/2 tsp salt 1 TB mayo 1 tsp dried dill 1 tsp finely chopped fresh mint pepper to taste
mix all ingredients, let stand while cooking for flavors to bloom.
