
Pork Lettuce Wraps (Moo Shu Pork)
I found this recipe on the web and changed it up some to suit me. lol It turned out really good.
Ingredients:3 T. hoisin sauce plus extra for dipping
3 T. rice vinegar
3 cloves garlic, minced
1 tsp. fresh ginger, grated
salt and pepper
1-1/2 lbs. pork tenderloin, cut into strips (I used 3 pork flat iron steaks, cuz that's what I had)
2 T. sesame oil
8 oz. shiitake mushrooms (I used porcini and white button)
1 14 oz. bag coleslaw mix (or shred your own)
1 bunch scallions, thinly sliced
Bibb lettuce leaves (or any crispy kind you have on hand)
Preparation:Whisk together hoisin sauce, vinegar, garlic, ginger and salt and pepper. Pour over the sliced pork in a baggie or bowl. Let marinate for at least 30 minutes.
Heat 1 T. sesame oil in skillet at high heat. Drain some of the marinade off the pork and stir-fry until browned. You may have to do this in a couple batches. Save the marinade. Put the pork in a bowl and add 3-4 T. water to the skillet and scrape up the browned bits, pour over the pork.
Add the remaining sesame oil to the skillet and add the mushrooms and slightly brown. Add the 3/4 of the coleslaw and cook until wilted. Add back in the pork, the saved marinade and half the scallions. Stir fry for a couple minutes. Add the rest of the coleslaw, turn off heat and sprinkle the remaining scallions on top.
Serve in lettuce leaves.
