I saw this in my newspaper yesterday and it just sounds so good and refreshing...

Ingredients:

2 oz. thinly sliced prosciutto, coarsely chopped
About 20 large basil leaves, chopped (3 T plus more for garnish)j
2 T. olive oil
1 - 2-1/2 lb. ripe, orange-fleshed melon, such as canteloupe, peeled, seeded and cut into 1/2=inch cubes (about 5 cups)
Freshly ground black pepper

Preparation:

Combine prosciutto, basil and oil in a small bowl. Mix the ingredients and separate any prosciutto pieces that clump together.

Place melon cubes in a serving bowl, add the prosciutto-basil dressing and toss to incorporate. Season lightly with pepper.

Now that sounds pretty good. Where do you get prosciutto?? I've looked for it and never have luck finding it...

I'd really like to try this though.
