Tomatoes, Zuchini and Feta Pasta Salad

 Tomatoes, Zuchini and Feta Pasta Salad
This sounds really good to me.....
Ingredients:
12 oz. Farfalle pasta 2 T olive oil 1 whole lemon (more to taste) salt/pepper 2 whole zucchini, diced or cut into small wedges Grape tomatoes, cut in half (as many as you like) 1/4 cup minced parsley 6 oz. crumbled Feta cheese
Preparation:
Cook pasta according to box directions, drain and rinse in cold water. Place in bowl and add oil, lemon juice, salt and pepper. Toss to cover pasta. Add the zucchini, tomatoes and parsley. Toss again. Add half the Feta cheese and toss to combine. If you need more moisture add additional lemon juice or oil to taste. Add the other half of Feta on top. Chill for at least a couple hours.

It's really good Rob! It's like a dense cucumber and it takes on the flavor of the lemon juice and olive oil really well. It surprised me how good it turned out. I will definitely be making it again. Give it a try!
