Post Chicken ala King (from Better Homes and Gardens)
I've got a late 80's version, lol the people in it look funny

Chicken ala King

1/4 cup butter
1 cup sliced fresh mushrooms or 1 4 oz can mushroom stems n pieces, drained
1/3 cup ap flour
1/2 tsp salt
1/4 tsp pepper
1 3/4 cups milk
1 cup chicken broth
2 cups chopped, cooked chicken or turkey
1/4 cup diced pimento (never have these lol)
2 TB dry sherry optional (never have that either)
8 toast points (I like it over rice better, I think soggy bread is gross)

serves 4

melt margarine in lg saucepan. If using fresh muchrooms, add and cook until tender. Stir in flour, salt, pepper, cook 1 minute. Whisk in milk and chicken broth... cook and stir until thickened and bubbly. Add canned mushrooms if using, then chicken, pimento, and sherry. Serve over toast points. (RICE) hehehe......

Ahhhhh, memories!

I think sometimes the diner I went to added broccoli. I do have some pimento too. ;) I'll have to plan on making this sometime soon.........I know DH will really like it. Thanks Suzi!

I'm looking forward to see Mamas' recipe too......

This is really similar to the recipe I'm using. No sherry though and you serve it over toast, rice, egg noodles or mashed potatoes.

If you don't like or don't have pimentos, you can just saute some red peppers with the green peppers and omit the pimento.
