
Barb's Chicken/Pasta Salad
Ingredients:2-3 chicken breasts, (grilled, poached, or fried), cut into bite-size pieces
3/4 lb. cooked pasta, I used rotelle.....use what you like
1 green pepper, chopped
1/2 cup celery, chopped
1/4 cup roasted red peppers
Feta cheese.....as much as you like (about 1/2 cup)
Preparation:I grilled the chicken breasts just seasoned with salt and pepper. Cut up into bite size pieces. Cook pasta, drain. Put both in a bowl with the rest of ingredients. Add the dressing, mix completely. Top with some extra Feta if you like. You can serve it warm or refrigerate for a couple hours.
Dressing Ingredients:1/2 cup chicken broth
1 T olive oil
1 T red wine vinegar
1 tsp. Dijon mustard
2 cloves garlic, minced
1 tsp oregano
1/2 tsp. thyme
salt and pepper
Preparation:Whisk dressing ingredients together until well blended. Pour over salad ingredients.
