 What are you baking today??
Before going to work this morning I made two loaves of Cinnamon Bread for Easter brunch. I got the idea from the King Arthur website ( http://www.kingarthurflour.com/recipes/ ... ead-recipe), then adapted it to my basic white bread recipe and added a whole egg, 1t of my homemade vanilla extract, some extra flour to offset the egg, and topped it with egg wash and rolled oats. The filling and directions on rolling came right from the KA website recipe.

Re: What are you baking today??
Made another carrot cake for a dinner we're going to on Friday (it's a bear frosting a cake in a hot kitchen. everything sags.), and some cinnamon rolls at DD's request. Tomorrow will be sandwich rolls and bread for our family reunion on Saturday...about 80 people if they all show up, It's going to be 90 degrees, so some of the antiques might not come out in that heat.

Re: What are you baking today??
Well, it took 5 hours from start to finish, but I made the 80 sandwich buns (20 were still in the oven when I took the picture), two loaves of Italian and two loaves of honey whole wheat. I used the Italian bread recipe to make the buns this time instead of the plain white bread recipe. I used 11-1/2# of flour this morning. That's why I buy it in 50# bags.

Holy cow Joe!! Was there a big difference in using the Italian bread recipe? Do you like it better than the white bread recipe? I don't have the recipes in front of me so I can't remember what's different between the two.

Re: What are you baking today??
The big difference is that the white bread recipe uses butter and milk, which makes the crust and crumb soft like a hamburger bun from the store. The Italian recipe uses EVOO and water, which give a chewy texture like a Kaiser roll. Since these will be used for pulled pork sammies, I chose the Italian recipe which is more like you would get with a pulled pork sammie at Smokey Bones.
