 Florentine Rice Pilaf
Made this up the other night, forgot to post it!
3 TB butter melt and add the following, saute until pasta is browned:
2 cups long grain rice 1/4 lb spaghetti, broken into pieces 1 TB minced garlic
Add
2 1/2 cups water 1 TB chicken soup base or boullion 1/2 tsp salt 1/2 tsp pepper 1 1/2 cups frozen chopped spinach
Bring this to a boil, then simmer until rice is tender. When done, add: 1/2 cup grated parmesan cheese 1 TB lemon juice
Toss well and serve.

That sounds good and healthy too! I believe I have all the ingredients too. I'll be making this, this weekend with Mama's sticky chicken. Yummmmm

You don't even need to thaw or drain the spinach..... I've been buying the family sized bags and throwing in handfuls.... which is awesome because I think thawing and squeezing it is one of the kitchen prep tasks I hate the most!
