I've adapted and tweaked this from a few I found.......
Chicken Enchilada Soup
2 tbs Olive oil
2 1/2 tbs chicken bouillon
2 yellow onions
1 tsp cumin
1 jalapeno, miced, seeded
1 tsp chili powder
1 tsp garlic
1/2 tsp cayenne pepper
1/2 cup masa flour
5 1/2 cups water
2 cans enchilada sauce
1 can diced tomatoes, drained
5 oz velveeta
18 oz chicken breast, cook, chopped
1 can black beans, drained and rinsed
2 cups frozen corn
1 Heat olive oil over med-high heat, cook onion and jalapeno until soft. Add masa flour, boullion, cumin, chili powder, garlic, and cayenne, cook for 1 min.....
2 Add remaining ingredients except for chicken and cheese, bring to simmer. Add chicken and velveeta.... once cheese is melted go ahead and EAT!
