Un-Rolled Pesto Chicken Rolls

 Un-Rolled Pesto Chicken Rolls
This is me, saving myself from dinner disaster. FYI, they do something awful to those giant Sam's birds to get thier boobs off..... I went to pound them thin and they shredded.....
SO, here's the recipe...
4 boneless skinless chicken breasts, pounded to about 1/2 inch, maybe less. 1 cup flour 1 tsp salt 1 tsp pepper 1 tsp garlic powder 2 eggs 2 TB milk 1 cup italian style breadcrumbs 1/3 cup or so grated parmesan 4-5 slices thin deli ham... enough to cover chicken 1/3 cup or so basil pesto shredded provolone cheese Olive Oil Butter
Mix flour w/ salt, pepper garlic powder, set in 1 pie plate beat eggs w/ milk, set in another plate mix breadcrumbs and cheese, another plate
dip chicken in flour, then eggs, then breadcrumbs. Set on raised cooling rack so let the crumbs set, rest about 10 min.
working in batches, brown breaded chicken in 2 TB Oil and 2 TB butter, adding more if needed with each browning. Remove once golden brown on both sides, back onto the raised rack, which should now be set over a cookie sheet.
Once all chicken is browned, and mostly cooked thru, layer ham over each chicken, spread with a thin layer of pesto, sprinkle w/ shredded provolone.
Bake all topped chicken at 350 about 15 min, or until cheese is melted and just browned.
Serve with pasta sprinkled with Olive oil, and topped with a little parmesan chesse.

Nice save!!! lol I'm sure they tasted as good as they look.... Those chicken breasts are big at Sam's! I sometimes have to slice them in half horizontally then one piece ends up thinner than the other.

lol thats what I usually do with them too, but I was thinking I didn't want to get them cut all weird like I usually do because then I CERTAINLY couldn't stuff n roll them....so I woulda ended up with this either way I suppose!

My guess is that they inject them with "solution". Not only are you buying an inferior product, you are paying extra for water, and who knows what else they put in that "solution". Your meal still looks good! Great save!
