We had this for lunch today. Crispy Shrimp Quesadillas

A Simple and Easy Mexican Shrimp Quesadillas

Ingredients -
½ cup cooked shrimp, coarsely chopped
4 flour tortillas
1 cup Monterey Jack cheese
1 tablespoon finely chopped cilantro or parsley
¼ cup green onion tops, thinly sliced

Preparation:
Sprinkle half of each tortilla with cheese, onions, shrimp and cilantro or parsley.

Fold the tortillas in half and cook them in a lightly greased skillet over a medium heat until they are golden brown all over.

Cut each tortilla into 4 wedges to serve.

Hmmmm sounds interesting Barb! I always want to do more experimenting with shrimp but hubby is alergic! Looks and sounds great though!


The only fish I have it whiting that I'm thinking about doing something with but I'm kinda paranoid since the last time we had them I missed tons of bones in them :(
Maybe one day this week since Im low on groceries anyways......
