Wow! Great potato dishes everyone. I don't know how I missed this game but I'm glad I found it! I love that onion soup mix...it's so handy.

Suzi's Potato Soup

feeds an army, use your big pot!

1 lb bacon, diced
3 stalks celery, chopped
2 onions, chopped
4 cloves garlic, minced
about 10 med sized potatoes, peeled, diced roughly 1/2 inch
10 cups warmed chicken broth (or enough to cover potatoes)
3 TB butter
1 1/4 cups half n half (or any combo of milk / heavy cream)
2 tsp dried tarragon
1 tsp dried parsely
salt n pepper to taste

In large pot, brown bacon 'til crisp. Remove to drain on paper towels, reserve 1/4 cup or so of drippings in pot.
Add celery, onion, garlic to pot, cook 'til soft.
Add potatoes, cook 4-5 min or until beginning to soften.
Add bacon back to pot, along with warmed chicken broth (warm makes it come up to simmer much faster) Bring to simmer and cook about 10 min until potatoes are fully cooked thru.
Add butter and both herbs, when butter is melted add cream.
With immersable stick blender, (or boat motor as Emeril says :) ) blend until desired consistency.... I don't care for chunks of potato in my soup to I go til its all done. If you like chunks, stop sooner. :doh:
Season w/ s&p to taste... EAT!

Very nice, Suzi. Gotta love a recipe that starts out with 1 lb of bacon :handgestures-thumbupleft:

One of these winter days I'm going to halve this a couple ;) times and make it!

BTW, tomorrow is a new ingredient/dish, but you still have all of the day to get in any last minutes potato dishes.

Here is one that Barb knows about. I haven't done it lately but will
as soon as I get some fresh bacon.

Tin Potatoe

Put the bacon, about two strips folded according
to the length of your potatoe, on aluminum foil.
Place the potatoe on top of the bacon; place sliced
onion on top of the potatoe and fold up for baking.
Bake at 450 degrees F. for approximately one hour.

BTW, use russet potatoes. My Iowa buddy used a big
red potatoe out of his garden and it was way too moist/watery.

This potatoe treatment I got from Mad Mary's Steak
House and Saloon in Pierre, SD while pheasant hunting
in November 2010.
