Making these tonight but using Paula Deens recipe version using the potato chips on top...in the oven now!

That sounds good Dee...........I've used potato chips on top of other dishes and it's really good. My bf puts them on this casserole too.

its basically the same recipe except more sour cream, garlic powder, and the potato chips...oh yeah she added onions but I added onion/bellpepper mixture. LOL but other that THAT its the same! lol

Sometimes these are called Church Potatoes.
I got these from my bother and he got them from a local Iowa church cookbook. I'm sure every congregation in the country has their version.
My son says its a fav in Utah.
Funeral Potatoes
2 lb. bag of of hash brown potatoes (I use the southern style in cubes.) 1 stick melted butter 12 oz. sour cream 1/2 cup finely chopped onion 1.5 cups grated mild cheddar cheese 1 can cream of chicken soup (or cream of celery for you vegatarians) 1/2 can of milk
Mix in a large bowl. Bake in a 8.5 x 13 inch greased cake pan (or 3 qt. casserole) - I use butter Pam. Bake at 350 degrees F.

That's pretty much how I made them JW. I just used the regular hash browns. I also put french fried onions on top the last 10 minutes. It gave them a whole different flavor.
Yep, I'm sure there are plenty of variations. lol To each his own and what they like......
