 Strawberry Spinach Salad
2 bunches of fresh baby spinach 1 large head of Romaine lettuce, chopped 1 Vidalia Onion (or any sweet onion), thinly sliced 1 pint of fresh strawberries, sliced 1/2 cup of slivered almonds 1/2 cup of mayonnaise 2 tablespoons of Red Wine Vinegar 1/4 cup of sugar 1/4 cup of half-and-half 1 teaspoon celery seed
In a saute pan over medium heat, lightly toast the slivered almonds. Remove from heat. Set aside.
Put spinach, romaine, onion and strawberries together in a large bowl. Toss lightly. Sprinkle on the toasted almonds.
Mix together the mayonnaise, red wine vinegar, sugar, half-and-half and celery seed in an airtight container. Shake vigorously to mix well or you can whisk together in a bowl.
Pour over the salad. Enjoy!

 Re: Strawberry Spinach Salad
That looks and sounds good Mama. The strawberries are finally starting to look decent in the stores here. This would be a good one to make for a spring shower. Yum

 Re: Strawberry Spinach Salad
Thanks! Let me know how you like it. I just made some for DD and her DH the other day. There are 2 of them and she said they ate it all in one sitting...

 Re: Strawberry Spinach Salad
Oooh very pretty! I've never been able to bring myself to eat fruit in my salads...but with that I'd be tempted for suure!!

 Re: Strawberry Spinach Salad
Interesting, I need to make a small batch of this. I doubt DH would ever touch it. He is meat and taters all the way.
