It depends on how much bread crumbs you want to use. If you use alot of crumbs it will stretch to 24 but the clam flavor will be cut down. I like a little less bread crumbs - just use an equal amount of crumbs as you have clams and other ingredients (example - 1/2 cup clam, onion etc mixture use 1/4 -1/2 cup crumbs depending how bready you want it. Remember more crumbs less clam). I would use the little necks for these because they have a more mild, delicate flavor which is much better IMO for these. Use the larger ones for chowder where you want a more intense flavor. But that is all up to your taste.

I realize the more crumbs I use the less clams I will have in the mixture, lol.
You said to use a dozen clams, but I only count ten half shells on your plate... is that all you got? Just give me a guesstimate here peeps. When you start with a dozen clams, how many shells get stuffed? 10? 14? 20? One for the plate, two for the cook :lol:

I actually had 13 shells stuffed but didn't want to crowd the plate. (I didn't like the looks of the fresh clams (they were to big for my liking) so I used minced clams this time because the last time I bought 2 dozen fresh and made casino and saved the shells. So I reused the shells this time. ) Again it depends on you. How much you clean the fresh clams (some people only like the white meat and throw away all the black or discolored stuff - which I tend to do myself so you have less meat). Some people like it bready. I can't give you an exact answer except you will definately get 12 but can stretch it to more. Sorry I can't give you the answer you want. It also depends on how full you stuff the shells. There are a lot of variables Fred. You are just making them for yourself? So just play with it the first time and go by your liking. Next time you will have a better judgement as to how many to your taste. This is just a homecooks recipe with no exact measures. I never get the same amount depending on bread, onions, clams and how full I stuff the shells.

Start with 12 Fred. You will deffinately get 12. If there is extra filling just fill them a second time or clean the extra shells. They are definately worth the work. These were a side so I used less bread crumbs. How many do you want/how many can you eat? They are worth it. Boy you are a tuff cookie!! LOL but I luv ya.

PS - The scraping isn't that difficult.
